Fans of sour beer have another reason to cheer in Austin. Blue Owl Brewing is taking flight in East Austin this weekend. The brewery is the brain child Jeff Young and Suzy Shaffer, formerly of Black Star Co-op. Blue Owl is the first all sour mash brewery in the U.S.
What is sour mashing? At its core, the goal of sour mashing is simple: create an optimal environment for Lactobacillus bacteria and a sub-optimal environment for spoiling organisms. The sour mashing process produces a tart flavor, without the extensive aging process. The technique yields replicable and predictable product. Austin Beerwork’s Einhorn is a great example of a fine sour mashed beer.
Blue Owl’s owls initial portfolio will include Little Boss, a Sour Session Wheat; Van Dayum, Sour Red Ale; Spirit Animal, Sour Pale Ale; and Professor Black, a Sour Cherry Stout. These beers are tart, refreshing, and delicious!
